Before opening inside Lotte Plaza Market, Mae Tao began as Mae Tao & Son’s Kitchen, a food truck run by Brittney Keophoxay‑Lam and her husband, Dan Lam. Every dish they served was a love letter to their Lao and Cambodian roots. Their parents escaped their home countries during the Vietnam conflict, and Brittney and Dan grew up with the flavors, stories, and traditions that shaped their identity.
When they first started cooking publicly, they worried people wouldn’t understand their food. They were even told to label themselves as Thai to be “more marketable.” But they refused. They stayed proudly Lao and Cambodian, and that authenticity became their superpower.
Orlando embraced them with open arms. Crowds lined up at Mills Market. Foodies raved. Their bold, creative twists on Southeast Asian staples earned them a loyal following and even caught the attention of Disney Springs executives.
Their journey was about built on a business and a legacy. As they prepared to welcome their first child, Brittney and Dan dreamed of creating something their son could be proud of: a brand rooted in heritage, hustle, and heart.
Today, Mae Tao is the next chapter of that dream. No longer a food truck, now a vibrant, permanent home inside Lotte Plaza Market, Mae Tao brings the same cultural integrity, the same explosive flavors, and the same joyful energy to a bigger stage.
